History: This is technically for comic-verse Gambit, but still. A lot of his background for Evo is getting headcanoned in to match his comic background.
In Evo-verse, Gambit was recruited by Magneto for a decent portion of the series to help in fighting against the X-men. (That, and annoying the hell out of the Brotherhood.) Once Magneto was taken out by Apocalypse, Gambit went out on his own, eventually going to New Orleans to rescue his adoptive father. This required "borrowing" Rogue for a while. And by "borrowing" we mean "kidnapping." He did let her go, though, and gained some genuine respect for her when she ultimately decided to help him on her own. Before they parted ways, he gave his lucky Queen of Hearts card to Rogue, and that was the last he was seen in the series.Save in Charles Xavier's foreshadowing at the end.
Personality: Gambit is an odd one. On the surface, he's all scoundrel. He flirts with just about any woman he sees, jokes around regularly, and has a terrible habit of dancing on the very edge of where danger turns into certain death. (This has earned him being called "crazy" on several occasions, and he never denies it.) Everything is a gamble. He enjoys messing with others and has no qualms with doing whatever it takes to get his goals done. In Evolution, this means even going so far as to be one of Magneto's henchmen -- when it's a choice of which leash is longest, he'll go to whoever will give him the most freedom. (Or, alternatively, whoever pays the most.)
That being said, though, Remy does have his limits. If his self-respect is on the line, he'll leave. Deep down, he's a good soul; it's just that there's quite a bit of scoundrel in the way. Having grown up a thief, Remy is a fast-thinker and never shies away from a risk. A lot of his habits working in a crime family are still present despite the fact that he's since walked away from it. He's still a smooth-talker, a charmer, and yet someone that most people just find they can't trust. The fact that he tends to lurk around quietly and get to know everyone before revealing anything about himself doesn't help with this.A little mild stalking never hurt anyone, right? That, and his thieving and scheming.
He also has a tough time sitting still. It might be the pent-up kinetic energy flowing through his body, but for whatever reason, he's constantly on the move and so tends to enjoy athletics. (In the comic, he admits that he likes to do any difficult thinking while training in the Danger Room.)
But, again, Remy does have his good side. He'll fight for whatever he thinks is right, and he'll defend those who need defending. Even in the case of his manipulative foster father, who he hated in much the same way Rogue hated Mystique, he still went to the man's rescue when he knew the odds were sharply stacked against him. Even though he kidnapped Rogue to try to weasel her into helping him, he still let her go and came to genuinely respect her and enjoy her company. This good side drives him towards finishing any goals he sets no matter what, although his loyalty is definitely wavering in any goal he doesn't solidly believe in. Deep down, all he wants is redemption, but he honestly has his doubts on whether or not he deserves it. He definitely has a soft spot, much as he wouldn't want his enemies to know it. He's surprisingly loyal to those he cares for as well, to the point in the comic that he'll refuse any girls throwing themselves at him because he's taken or refuse to kill a zombie because the body that's motoring around used to be a good friend of his.
He's also terribly proud of his Cajun heritage. He gets picked on for the accent fairly regularly, but it doesn't faze him one bit. He loves the culture, food, and life of New Orleans and the Mississippi. Give this boy some crawdads and jambalaya and he's a happy camper.
As much as Remy relies on his own strength and abilities to get him out of the ridiculous situations he oftentimes gets himself into, he still has faith in Lady Luck in the end to pull him out of the worst of it. Though he carted around his "lucky lady" -- really just the Queen of Hearts of the deck of cards he always has on him -- for emergency usage, he did end up giving the card to Rogue after she mentioned that her own luck was particularly rough.
...Which brings us back to him being a merciless flirt. It's all about the game.
Strengths:
Physical: Remy is a mutant. This basically equates to him having several physical advantages over your average human. Aside from being very physically fit and being able to hold his own in hand-to-hand combat, Gambit is very speedy and particularly agile... which is to say nothing about his mutant abilities. His mutant abilities are twofold: one, he possesses a hypnotic charm (although it's not terribly powerful; it mainly just amplifies his smooth talking); two, he can manipulate the potential energy in any object and charge it full of kinetic energy, which usually results in explosions. There is so much stored-up energy within him that even his eyes are glowing red with energy. (And yes, they're a dead giveaway in the dark.) He has uncanny accuracy in throwing whatever objects he's charged with kinetic energy, his most common weapon of choice being playing cards. Though he's also very skilled at fighting with a bo staff, Gambit's real trademark is his exploding cards.
To get back to his basic human abilities, though, he's a fantastic thief. The agility factor figures in greatly to his skill in this field.
Mental: Aforementioned stored-up energy has created something of a mental shield that keeps Remy shielded from most unwanted psychic intrusions. He's also a very quick thinker, shown beautifully in how many times he shifts gears in "Cajun Spice", avoiding the X-Men as they searched for Rogue and adjusting his plans on the fly to keep on towards his goal. The quick thinking makes him pretty good at manipulating others to get what he wants -- he even tells Rogue to leave at one point in their adventure in aforementioned episode, then stops just around the corner because he full well knows she'll come back. These quick wits serve him well in fights, although he'll play dumb sometimes to lure an opponent into a false sense of security.
Emotional: Remy's been through a lot in his life and holds himself together remarkably well despite it all. He definitely seems crazy on the outside sometimes, but when push comes to shove, he's very together. Even when faced with his foster father who used him as a weapon in a turf war between crime families in New Orleans, Gambit still kept his cool as the man tried to lure him back into a life of crime and being used again. It angered him (especially when his "father" started eyeballing Rogue and Storm's abilities as potential weapons), but he still kept calm despite telling Rogue earlier in the episode just how much he hated his mutant powers being used.

Physical: The glow-in-the-dark eyes could potentially be a weakness here. Also, Gambit's energy levels can spike ridiculously high, to the point that he can be dangerous to anything around him. If the energy rises too high, he can burn others with a touch, or, if it misfires, he could cause a major explosion accidentally. (In comic canon, one of his energy-charged cards explodes in his hand, for example, and he's completely blinded, not to mention burned.) He is definitely not immune to the damage his kinetic charges can do.

At one point, he kinetic charges an entire train car (and threatens to blow it up) just to make a point to Rogue, who backs off of trying to throw him out because he's "just crazy enough to do it." He also has a nasty habit of not doing things the easy way. He ultimately gets the results he's wanting, but he never goes about anything easily. For example, stealing a bus and wrecking it to create a big enough explosion to take out the spider guardian, or kidnapping Rogue just to get her help. This is definitely part of what makes him hard to trust; he's unpredictable a vast majority of the time.
Emotional: Emotionally, Gambit has his fair share of baggage for his past, and it weighs on him more than he'd care to let on. Ultimately, all he wants is to be able to move on with his life, but he's not sure he would entirely deserve it. Even though he looks like a cocky bastard on the surface, deep down, he has his doubts. He may seem like he doesn't care what others think of him, but the way he tries to convince Rogue that he wasn't out to use her and the fact that he ultimately leaves with his "father" in the end speaks volumes for how much he really does care.

- Gambit has been (slowly) growing out his hair ever since Jubilee ragged on it. It's gotten a little shaggy, and hangs into his eyes and, if he's really feeling motivated, it's long enough to pull back into a very small and stubby ponytail. He mainly leaves it alone, though, and just keeps it out of his eyes via bandanna.
- His goatee has been shaved off by one Adele LeBlanc in retribution for teasing the daylights out of her. He's not growing it back yet, but he's also not too good about shaving, either, so he's pretty stubbly.
- His wings will almost always remain hidden.

- Looks like a tribble, only it is a much more violent shade of orange.
- It's the spawn of an evil bit of embroidery that grew to eat an entire sofa, but it can't eat too much and can only grow in size to roughly the size of a large chihuahua, and that is only if it overeats. A lot.
- It feeds on fabric, prefers cotton, but is also known for eating Gambit's coat if left unfed.
- Name was originally Oliver, as a joke of "Oliver and Company", but Gambit tweaked the name a bit when he ended up stuck with the thing as a pet.
- Impervious to fire, explosions, blunt force damage, and blades. Is weak to extreme cold, but Gambit will most likely never figure this out.
- Has a collar attached around its middle. It's more or less there to give Gambit something to latch onto and lob it if need be.
- Largely lethargic. It mostly just flops around amorphously. Unless it's hungry, then it can move.
- Makes very little noise, but occasionally purrs or makes a noise something like a giggle.
- Gambit hates it. But he can't seem to get rid of it either, so he's stuck with it.
